The Bawkstory

THE BAWKSTORY

On May 12th, 2023, Farmer Shay was born.

It was a gorgeous summer day in Copenhagen, and I had just finished a scrumptious brunch at ØsterGRO, a rooftop community garden (+restaurant) where leftover food scraps are fed to chickens, who in-turn produce eggs & fertilizer for the farm – creating a zero-waste food loop!

As an adorable hen happily nibbled on the rye bread in my hand, I felt a deep sense of kinship with the earth, and a renewed respect for the magical processes of nature that produce the food on our plates.

I realized that this was a precious feeling I wanted to experience every day. And so from that moment onwards, it became a question of how (not if) I would become a backyard chicken farmer.

Fast forward just four months, and I found myself raising six fluffy chicks in our living room. The rest is history...
